Grilled mushrooms

I am not a fan of mushrooms. I will eat them sliced very thin in our salads, but I don’t want to eat them pretty much any other way.  Waldo however loves mushrooms, he eats them with steak (well he did before he went pescetarian), on pizza, on just about anything he can.

I read in How to Cook Everything Vegetarian that people that convert to vegetarianism have to change the way they think about meals.  Meat eaters have a meal that centers around a main dish (meat usually) and then a side dish or two.  Vegetarians usually eat what amounts to a bunch of sides and that is how its suppose to be.  These grilled mushrooms made a great side to add to Waldo’s plate.

Waldo loved, Loved, LOVED these mushrooms.  They were easy to make and he said it was like eating meat.  He never believed people when they said that mushroom cooked the right way could taste like meat, but he believes it now.  He said that at first he tasted a really good steak and the rest of the bites were pork.  He is a big fan now and says that these mushrooms need to be on our weekly menu.

Speaking of weekly menus we have a very boring selection of food options, this is mainly my fault as I’m the pickiest person you will likely ever meet.  We have about 8 dishes that we rotate through, so our dinners are pretty routine.  I’d like to add options and broaden our menus.  I want eating to be healthy and really enjoyable.  My goal for the next few months is to get a wider array of food options for my family.  If anyone has any suggestions I’d love to hear them.

We made 2 shiiitakes and 1 cremini. I cut the sauce amount in half and it was still a little more then I needed, but not by much. I didn’t get a picture of the finished mushrooms because Waldo was enjoying them too much to let me at them.

Grilled Mushrooms

adapted from How to cook everything vegetarian by Mark Bittman

1/3 cup EVOO

1 tablespoon minced shallot, scallion, onion or garlic (I used a little shallot and garlic)

1 teaspoon fresh thyme leaves, if available (I only had dried thyme and Waldo was fine with that)

salt and freshly ground black pepper

4 large portobello mushrooms, trimmed and cut in half right down the middle; or 12 to 16 cremini, trimmed and cut in half or left whole; or 12 to 16 shiitakes, stems removed, caps left whole or cut in half

Chopped parsley for garnish (I left this out because I forgot parsley at the store)

Heat the grill until quite hot and put the rack about 4 inches away from the hear source.  Mix the EVOO, shallot/garlic, thyme, salt and pepper. Brush the mushrooms all over with about half the mixture.

Grill or broil the mushrooms with the top of their caps away from the heat until they begin to brown, 5 to 8 minutes. Brush with the remaining oil and turn. Grill until tender and nicely browned all over, 5 t 10 minutes more. Garnish and serve hot, warm or at room temp.

Practice for some time in the future

I’ve watched my niece Olivia once day a week for the last couple of weeks and it’s been so much fun, with a few meltdowns thrown in, but mostly a lot of fun.  I was very a little nervous about keeping Livi because I wasn’t sure how Lily would do.  I’ve watched Livi before a number of times, but this time I’m keeping her at our house rather than at my Grandma’s house and I wasn’t sure how Lily would take someone else on her turf.  Livi’s been here twice now and for the most part Lily LOVES it.  Lil talks about “her new friend OliviWa” for days after and is quite unhappy when Livi leaves.  I don’t get nearly as much work done as I normally do, but I make up for it after she leaves or the next day.  It’s so worth it and again this one of the biggest reasons I’m sad about moving (I promise there’s a post about this in my drafts).  I grew up really close to my cousins and have always wanted that for Lily.  It’s taken her a year, but she and Livi are friends now, I don’t want her to loose that.  Anyway back on track.

The last time that Livi was over Lily slept terribly the week night before and (my sister) Jolene brought donuts for breakfast, Lily and Livi shared one.  I should stop here and remind anyone that doesn’t know, that we limit Lily’s sugar intake to almost nonexistent. About a hour and a half after the donut Lily had a meltdown of epic portions, it took me a few minutes to figure it out, but as soon as I took her in the kitchen and gave her something to eat (toast) she was fine again.  While we were in the kitchen I decided that we should make some playdough and have some fun.

I pulled Lil’s Learning Tower up to the counter and showed Livi what it was for.  I let each of them dump one of the major dry ingredients into the pan, Lily is a pro at this.  Then let them each take a turn at stirring before I put the hot water in.

While the playdough was cooling we set the dining room up for messy playing with my standard crafting covers. I put a leftover birthday party, cheap, plastic tablecloth on the table, and my old t-shirts on the girls. Because they are my t-shirts of course they are WAY too big so I gather up some of the excess material at the back of the neck and twist it a little and clip it with a pampered chef clip. It works great.

At first they just used their hands and the one play kitchen item they each had for some reason with the playdough. After a while Lily started asking for our normal playdough mashing devises.

I also give them a potato masher and a old garlic press.  Lil loves the garlic press and had the first go with it.  As soon as Livi saw the neat sketti noodles it produced she had to try it.  It took  her a little trying to figure out the right ratio of dough and force, but she LOVED it.

They had such a good time that they played for almost a hour.  Anyone that has ever babysat while keeping their own kid alive would appreciate just how exciting it is when you find something to keep them both alive, not fighting, sharing nicely and mostly clean for almost a hour. It was bliss.

On The Road Again

We finally left California yesterday. We stayed in Reno last night. My internet connection is really spotty. I can’t get any of my work sites to load, they just time out, but my blog loads YAY.

We should be in Boise by this evening. I’m going to be so glad to be out of that uhaul. I’m sandwiched between Lily’s carseat and Waldo. It’s not totally uncomfortable, but I wouldn’t want to do it for much longer either.

Lily was a dream yesterday. We bought her 3 little $3 potato heads at Walmart before we left, but didn’t give them to her till we were on the road. She played with them just about all day yesterday. It seriously was the best $9 ever. Once it got too dark to play we set up the netbook on her lap (on a blanket to keep her from getting burned by the bottom) and she watched some Clifford the Big Red Dog episodes. She never got upset or complained once we were on the road and she stayed up till midnight without any drama. I’m so proud of her.
